Helena’s Honey Lime Chicken Kabobs

I used to be really bad at barbequing chicken. Dry, flavorless, even burnt, that was my M.O. That is until I discovered the miracle of marinating.  This honey lime marinade is easy (I haven’t yet figured out how to screw it up) and it gives you juicy, flavorful chicken on the grill.  Happy Fourth of July!  Ingredients  2 pounds of boneless chicken breast (or thighs), cut into 1 inch chunks 3 tablespoons soy sauce 2 tablespoons honey 2 tablespoons lime juice 1 tablespoon olive oil 1 tablespoon hot sauce (I use Frank’s) 2 cloves of garlic, finely chopped 2 tablespoons fresh cilantro, chopped 1 teaspoon cayenne*  Directions  Arrange chicken on skewers and marinate chicken covered in the fridge for 1-2 hours. Grill on medium high for 6-8 minutes on each side, until chicken reaches 165 degrees.  *The marinade has a little bit of a kick to it. If you want to crank it up, add more cayenne.
