The Enforcement Report for March 3 from the U.S. Food and Drug Administration (FDA) was pretty short when it came to the Class 1 Food Recalls and Enforcement Actions that we usually present here.
So, we got to looking at the less dangerous Class II Food Recalls and Enforcement Actions and found those contained all the interesting details on last December’s worldwide recall buy Englewood, NJ-based Unilever United States Inc. of all its Slim Fast products.
Bacillus species are well known in the food industry as spoilage organisms, and that was the reason for the gigantic Slim Fast recall. Bacillus cereus has been a recognized food illness agent since 1955, and although it rarely happens it makes people sick in a couple of ways.
Dr. Ken Todar at the University of Wisconsin provides the details:
“B. cereus causes two types of foodborne intoxications (as opposed to infections). One type is characterized by nausea and vomiting and abdominal cramps and has an incubation period of 1 to 6 hours. It resembles Staphylococcus aureus food poisoning in its symptoms and incubation period. This is the “short-incubation” or emetic form of the disease. The second type is manifested primarily by abdominal cramps and diarrhea with an incubation period of 8 to 16 hours. Diarrhea may be a small volume or profuse and watery. This type is referred to as the “long-incubation” or diarrheal form of the disease, and it resembles more food poisoning caused by Clostridium perfringens. In either type, the illness usually lasts less than 24 hours after onset. In a few patients symptoms may last longer.”
Unilever was concerned enough about it to recall 3.76 million cases of it product.
