Cindy Rice, RS, MSPH, CPFS, is a Registered Sanitarian, epidemiologist, food safety educator and consultant for the food industry. President of Eastern Food Safety, Inc. and Green Apple Tales, LLC., Cindy is a graduate of Bates College, and has a Master?s Degree in Public Health from the University of Massachusetts in Amherst. In addition to teaching food safety certification classes to the food industry, she devotes a great deal of time speaking and writing on topics of food safety to both the foodservice industry and the public. She is also the food safety expert for Ecolab, providing expertise to their national clients and writing for their national publication Food Safety Solutions. Her publications for the restaurant industry include Pocket Guide to Food Safety, PIC Manual, and an Allergy handbook, "Don't Pick off the Croutons!" She is also the author of Green Apple Tales, a 10-storybook series for children with messages about safe and healthy eating. Cindy is the mother of three grown sons and lives in Massachusetts with her chef instructor husband.
