A risk assessment including several scenarios has compared bacterial growth using different meat storage and defrosting conditions.
The assessment covered how bacteria grow in meat from cattle, sheep and pigs during chilling, storage and defrosting. It compared growth of pathogenic, spoilage, and indicator microorganisms in five scenarios. Steps after thawing at food business operator level were not included.
